Amber Cove is close to Puerto Plata on the north coast of the Dominican Republic. From here you can enjoy a drink at the Brugal Rum factory or the 16th-century San Felipe Fort, built to repel pirates. The natural scenery a little further inland is wonderful for hiking and mountain-biking, while the coastline has a reputation for excellent watersports, thanks to its predictable natural breezes.

Make sure you visit St Nicholas Abbey, a historic plantation house and one of three Jacobean mansions in the Western Hemisphere.
